Meal Plan #2

I didn't share one last week because after I made it, I realized that several of my picks for the week were from cookbooks that I own and not the inter-webs. And sharing those recipes without permission would likely get me in trouble. So this week I chose more share-able picks.

SUNDAY

Creamy Caprese Quinoa Bake
This is so delicious! You must try it. Even though it's not in season right now, it's all ok.

MONDAY
Tortilla Lasagna

TUESDAY
Baked Chicken Breast with Roasted Broccoli
I just wing this one. Cover the chicken with plain yogurt and then coat with bread crumbs and bake in the oven at 350 degrees, 15 minutes per pound. I also roast the broccoli in the oven .


WEDNESDAY
Basil Pesto Pasta and Salad
I make pesto similar to the one above, but at the store this week I couldn't find pine nuts. Instead I'll use walnuts and I'll throw a little kale in with the basil just for fun. It's hard to screw up. Just add lots of olive oil and lots of cheese.


THURSDAY
Leftovers (gotta have one of these nights each week, right?)


FRIDAY
Soup, salad and grilled cheese. You know how to make grilled cheese, right?
It's fun to add extras like caramelized onions, avocado, sprouts...
