I'm just going to throw this out here so that later, when I'm struggling to come up with what to put down for my weekly meal plan, I can look back and see what I've done in the past.
We tend to repeat a lot. Maybe I'll eventually work up to planning a month of meals at a time. But, for now, I do it week by week.
Here's what we are having this week for dinner if all goes according to plan (it usually doesn't at least once a week).
Sunday: Mighty Bowls of Goodness
This is from Whole Foods. I'll do tofu for mine and buy an already prepared chicken breast from the deli counter at Whole Foods. We are also going to repeat this on Wednesday and my hope is that it will be simple enough for Grace to eat (or at least pick through and eat the parts she wants).
This recipe is from the book Better Than Peanut Butter and Jelly
It basically is onion and green pepper sautéed with veggie crumbles (fake meat) and then 2 cans of tomato sauce. You serve that on top of elbow macaroni. The kids love this one. It's also good for lunch leftovers.
Tuesday: deli meat sandwich wraps with hummus and apple slices. This is our crazy day when everyone is home at a different time and no one is in the mood for a sit-down dinner. I'll have a veggie burger.
Wednesday: Mighty Bowls of Goodness (again)
I'll make the quinoa, spouts, and kale again and serve the left over chicken and tofu.
Thursday: Curried Butternut Squash Soup and english muffin cheese toast (I'll throw some prosciutto on the english muffin for Ben)
I buy a ball of already prepared pizza dough from Whole Foods and make my own. It's cheaper than takeout pizza and buying the dough saves a lot of work. I'll save some of the green pepper from Monday and the prosciutto as toppings.
Saturday: Crumb Topped Tilapia with Green Beans
This it easy to make and the kids seem to like it. I only eat the green beans and I'll probably have another veggie burger with them (sigh). I have a feeling this recipe might be a bit bland which may be why the kids like it so if you're looking for an amazing fish dish, this is not it. How's that for a ringing endorsement? Maybe I'll add some roasted potatoes...
